This is an easy to-the-table meal for two or four. Add a salad or an antipasti plate of olives, mushrooms, and peppers and you have a feast.
Ingredients:
12 inches prepared pizza crust (like boboli)
1 (6 ounce) can tomato sauce
2 garlic cloves, grated
1 tablespoon italian seasoning
2 tablespoons fresh basil, chopped
2 tablespoons italian parsley, choppped
1/2 lb sweet italian sausage, cooked and drained
2 portabella mushrooms
1 sweet onion, diced
6 ounces roasted sweet red peppers
6 ounces swiss cheese
6 ounces mozzarella cheese
1/2 cup parmesan cheese
salt and pepper, to taste
Directions:
1. Prepare crust according to package directions. Set aside.
2. Cook Italian sausage in skillet until browned, drain off fat, set aside.
3. Wash and de-stem portabellas, slice into thin slices, pat dry.
4. Drain and slice sweet red peppers, pat to dry.
5. In small bowl, combine tomato sauce, Italian seasoning, parsley, garlic, basil and salt and pepper, to taste.
6. Spread crust with sauce.
7. Arrange sausage and mushrooms all over pizza.
8. Add onion and sweet red peppers.
9. Place swiss and mozzarella cheese equally around pizza.
10. Sprinkle parmesan cheese on top.
11. Bake at 325 F until crust is golden brown and the cheeses are melted about 12-14 minutes.
12. Serve with additional parmesan and crushed red pepper flake, if desired.
