This is a great light sandwich!
Ingredients:
1 soft cracker bread, halved (lavosh) or 1 large flour tortilla
4 ounces hummus
1/4 cup fresh parsley, chopped
8 ripe olives, sliced
1 small cucumber, thinly sliced
1 small tomato, seeded and chopped
1 ounce feta cheese, crumbled
Directions:
1. Spread hummus on the bread to within 1/2 inch of the edge.
2. Add parsley, cucumber, olives, tomato, and cheese on top of hummus.
3. Roll up and serve.
