Very simple and simply delicious!
Ingredients:
vegetable oil cooking spray
1 large red onion, cut into 1/4-inch wedges
2 medium zucchini, sliced diagonally
2 crookneck yellow squash, sliced diagonally
2 tablespoons balsamic vinegar
1 tablespoon chopped fresh thyme
1 teaspoon olive oil
Directions:
1. Preheat oven to 400°F.
2. Spray large baking sheet with nonstick spray.
3. Toss onion and next 5 ingredients together on prepared baking sheet; spread in single layer.
4. Sprinkle with salt and pepper.
5. Bake vegetables until tender and brown around edges, stirring occasionally, about 35 minutes.
6. Makes 4 servings.
