This is from Diabetes Self Management Jan/Feb 2010. I haven't tried it yet. They list the exchanges per serving as 1/2 starch, 1 vegetable (carbohydrate choices 1/2). Cooking time is the minimum chilling time for best flavor,. Serving size is 3/4 cup.
Ingredients:
1 (15 ounce) can garbanzo beans, rinsed and drained
1 (14 ounce) can green beans, no added salt, drained
1/4 cup chopped parsley (or celery leaves)
3 tablespoons light italian dressing
1 tablespoon lemon juice
1/4 teaspoon black pepper
Directions:
1. Combine everything in a bowl. Chill for 2 hours before serving for best flavor.
