Mediterranean Shrimp & Scallop Stir Fry

Light, crisp, fresh and quick stir fry. Perfect with a small salad.
Ingredients:
18 shrimp
3 oz scallops
2 tbsps olive oil
2 cloves garlic, crushed
1 tbsp green onions, chopped
1 fl oz lemon juice
1/4 cup chopped zucchini
1/4 cup chopped eggplant
1/4 cup pieces or slices mushrooms
1/4 cup chopped red peppers
Directions:
1. Heat oil in skillet over medium-high heat.
2. Sauté vegetables for 3-4 minutes.
3. Add thawed shrimp and scallops and sauté for an additional 2-3 minutes.
4. Add garlic and green onions for the last minute.
5. Stir in lemon juice before serving.
