Salmon w/artichoke hearts, tomatoes, garlic, and olives on top Ingredients:
1 lb salmon fillet, wild |
2 cloves garlic |
1 small onion, diced |
2 roma tomatoes, diced |
4 tbsp lemon |
2 tbsp white wine |
10 kalamata olives, in half |
12 oz artichoke hearts, chopped |
2 tsp olive oil |
1 tsp dried oregano |
2 tsp pepper |
2 tsp salt |
Directions:
1. Season salmon with oregano, 1 1/2 tsp salt, 1 tsp pepper, and 1 TBSP lemon juice. Put in oven and cook for 25-30 minutes at 350. 2. Saute onion in olive oil, add garlic, add artichoke hearts, cook for a few minutes, add wine, cook for a few minutes more. Add olives and chopped tomatoes. Squeeze remaining lemon juice over salmon. Taste for seasoning and add salt and pepper. |
