Salmon w/artichoke hearts, tomatoes, garlic, and olives on top
Ingredients:
1 lb salmon fillet, wild
2 cloves garlic
1 small onion, diced
2 roma tomatoes, diced
4 tbsp lemon
2 tbsp white wine
10 kalamata olives, in half
12 oz artichoke hearts, chopped
2 tsp olive oil
1 tsp dried oregano
2 tsp pepper
2 tsp salt
Directions:
1. Season salmon with oregano, 1 1/2 tsp salt, 1 tsp pepper, and 1 TBSP lemon juice. Put in oven and cook for 25-30 minutes at 350.
2. Saute onion in olive oil, add garlic, add artichoke hearts, cook for a few minutes, add wine, cook for a few minutes more. Add olives and chopped tomatoes. Squeeze remaining lemon juice over salmon. Taste for seasoning and add salt and pepper.
