This recipe is so good I can't brag enough about it. It was served to us at one of our Supper Club mates house when they hosted Supper Club. Everyone in attendance asked for seconds and that is no joke. The hostess literally had to make 3 batches of this before the night was over. Read more . We all grabbed this recipe. I have since handed it out at least a dozen times since then. I eat this often and never get tired of it. Yummers.
Ingredients:
3 pita bread pockets
3 tablespoons extra virgin olive oil
8 cups spinach or other salad greens
16 ounces cottage cheese
1 cup finely diced seeded tomato
2/3 cup finely diced cucumber
1/4 cup finely diced red onion
1/4 cup chopped green onion
2 tablespoons white wine vinegar
1 tablespoon chopped fresh mint
1 teaspoon finely chopped fresh rosemary
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 teaspoon granulated sugar
1/4 cup crumbled feta cheese
Directions:
1. Heat oven to 450.
2. Cut pita pockets into wedges and brush with oil then bake 7 minutes and set aside.
3. Line individual serving plates with spinach leaves.
4. Scoop 1/2 cup cottage cheese into the center of each plate.
5. In a bowl stir together remaining ingredients except cheese.
6. Season with salt, pepper and sugar.
7. Spoon mixture over cottage cheese and top with feta cheese. Surround salad with pita chips.
