Mediterranean Salad

This is adapted from my 125 Meatless Main Dishes cookbook. Feel free to substitute other mushrooms for the oyster mushrooms. The dressing will keep for up to a month in the refrigerator, but you will need to bring small portions to room temperature before serving.
Ingredients:
4 cups mixed baby greens
1 tomato, sliced
1 yellow bell pepper, sliced
1 cup oyster mushroom
1/2 cup olive oil
1/4 cup balsamic vinegar
1/2 teaspoon garlic powder
1/4 cup fresh basil, minced
1 teaspoon dried oregano
Directions:
1. Whisk all of the dressing ingredients together.
2. Toss the salad ingredients together and divide onto 4 plates.
3. Drizzle about a tablespoon of dressing per plate.
