Mediterranean Pita Pizzas

These simple pizzas are great for lunch or any time. Experiment with different toppings.
Ingredients:
4 pita breads, about 6-inch inches
2 tablespoons prepared pesto sauce
4 tablespoons prepared pizza sauce
2 tablespoons fresh oregano
3 medium roasted red bell peppers in a jars
1 1/2 ounces sun-dried tomatoes, cut into strips
1/2 cup fresh baby spinach (optional)
7 ounces mushrooms, sliced
1/2 small red onion, sliced
2 ounces pitted kalamata olives, sliced
8 thin slices fresh mozzarella cheese
2 ounces shaved parmesan cheese
Directions:
1. Preheat oven to 350 degrees F.
2. Slice olives or leave whole.
3. Slice mushrooms and onions and saute til tender crisp, about 3 minutes.
4. Spread pesto on pitas, leaving 1/4 border around edge.
5. Spread pizza sauce.
6. Sprinkle oregano.
7. Put down a layer of spinach and top with peppers, tomatoes, mushrooms, onions, and olives.
8. Carefully lay cheese slices on top and sprinkle with Parmesan.
9. Arrange pizzas on pizza stone or lightly greased baking sheet and back until cheese is lightly browned, 15-20 minutes.
