MEDITERRANEAN MUSHROOMS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ludwig Estate in Temple Texas in 1984.
Ingredients:
1-1/2 pounds porcini mushrooms
3 tablespoons bacon grease
2 cloves garlic thinly sliced
juice and zest of 1 lemon
4 tablespoons parsley chopped
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Slice mushrooms into 3/4 thick slices.
2. Heat fat in sauté pan until smoking.
3. Add mushrooms and cook for 5 minutes then add garlic and cook 1 minute longer.
4. Add lemon juice, zest and parsley then season with salt and pepper and serve immediately.
