From Feed Your Soul cookbook. Thin with more or less water to thickness liking. Yogurt makes a good garnish
Ingredients:
3 cups lentils, cooked
2 c water
2 carrots
2 stalks celery
10 scallions, sliced
1 t coriander
2 t cumin
1 1/5 t thyme, dried
1/2 t black pepper
1 dash soy sauce, to taste
1 dash lemon juice, to taste
Directions:
1. Mix all except soy sauce, lemon juice, and scallion greens together and cook till vegetables ared tender, 20-30 minutes.
2. Add salt or soy sauce 10 minutes before end of cooking, and green scallions at end.
3. Add lemon juice to taste before serving.
4. Yogurt makes a good garnish
