I go this out of the Relish Magazine. The picture looks divine! I think would it be a great dip to impress a crowd. You can layer this dip any way you would like.
Ingredients:
1 (7 ounce) container of plain hummus
1 cup of chopped baby spinach
1/2 cup chopped tomato
1/4 cup chopped red onion
1/4 cup reduced-fat feta cheese
2 tablespoons of sliced kalamata olives or 2 tablespoons black olives
1/2 cup shredded cucumber
Directions:
1. Spoon half of the hummus in the bottom of a serving bowl. 2. Layer each ingredient on top of the hummus and add the remaining hummus on top of the dip. 3. Top with cucumber and olives. 4. Chill 30-45 minutes. 5. Serve with pita chips.
