Ingredients:
1/2 cup hummus with roasted red peppers
2 (6-inch) whole wheat pita bread rounds, cut in half
2 tablespoons (1/2 ounce) crumbled garlic-and-herb feta cheese
1 small cucumber, thinly sliced
1 large plum tomato, thinly sliced
2 pepperoncini peppers, thinly sliced
Directions:
1. Spread 2 tablespoons hummus inside each pita half; sprinkle each half evenly with feta cheese. Arrange cucumber and tomato in pita halves; top with peppers.
