Mediterranean Egg Salad

Can be eaten in salad, as a sandwich or alone any time of the day or night. Tasty and filling. Recipe can be increased.
Ingredients:
2 hard boiled eggs
4 pitted kalamata olives with herbs in oil, chopped
half tsp of the liquid and herbs from the jar of olives
half tsp mayonnaise
Directions:
1. For each 2 egg whites I use half an egg yolk. Chop egg whites. Mix the half yolk with mayo and oil.
2. Combine egg whites and egg yolk mixture- then mix in chopped olives. For color sprinkle lightly with turmeric. For added flavor mix in some pine nuts, finely chopped celery or green onions.
