Mediterranean Chicken Salad

A salad that is perfect for a light lunch
Ingredients:
chill time is not cook time
1 large cucumber, peeled, seeded and chopped
1/4 small red onion, thinly sliced
4 cups cubed poached chicken
1 1/2 cups crumbled feta cheese
2/3 cup sliced kalamata or black olives
1/4 cup chopped parsley
1/2 cup mayonnaise
3 cloves garlic, finely minced
1/2 cup plain yogurt
1 tbsp. chopped fresh oregano
salt and pepper, to taste
Directions:
1. Combine all ingredients by tossing lightly with a fork. Better if made the day ahead. Serve chilled on a leaf of lettuce
