i used a normal recipe for chicken salad and spiced it up a little with a Mediterranean twist. its very simple, very easy and extremely tasty. its also an easy and tasteful way of getting kids and adults to enjoy their fruits and veges. enjoy!! :)
Ingredients:
1/2 rotisserie chicken, shredded
1/2 finely chopped bell pepper
3 finely chopped pimento pepper
3 tablespoons chopped chives
3 tablespoons chopped parsley
3 tablespoons chopped cilantro
3 tablespoons chopped celery
1/4 cup raisins
1/4 cup finely chopped gala apples
1/4 teaspoon minced garlic
1/2 teaspoon chili powder
1/2 cup mayonnaise
Directions:
1. Put raisins to soak in warm water before starting your preparations in order to plump them up.
2. mix all ingredients together (add as much chilli powder and mayonnaise to please your taste buds) and set aside for about 10 minutes, in or outside of the refrigerator and then serve on crackers, bread or atop a hearty salad.
