Mediteranian Bulgur Pilaf

Bulgur wheat with zucchini and tomato
Ingredients:
1 cup bulgur
1 cup chicken stock
1 cup zucchini
1 tomatoe
1 tsp basil
1 tsp cumin
1 tsp chili
1 onion
1 tsp olive oil
1 clove of garlic
Directions:
1. Heat oil in a large saucepan over medium heat. Add garlic, onion and zucchini. Cook until tender. Stir in tomato (one can drained.) Cook covered for 15 minutes. Stir in stock and bulgur and bring to a boil until bulger is tender and liquid is absorbed. Stir occasionally. Add seasonings. Remove from heat and let stand for, covered for 10 minutes.
