Medallions of Chicken With Wine Sauce (heart-safe)

This is marked as Heart-Safe in my book that I got from a hospital in Washington state. I can't guarantee that, but I can guarantee the taste. Simply wonderful!
Ingredients:
4 (4 ounce) chicken breast halves, pounded thin
1/8 teaspoon pepper
1 tablespoon vegetable oil
1 tablespoon margarine
1 tablespoon flour
1/4 cup skim milk
1/4 cup unsalted chicken stock
1/2 cup white wine
1 teaspoon tarragon
1/2 cup sliced mushrooms
Directions:
1. Chicken:.
2. Sprinkle pounded chicken breast halves lightly with pepper.
3. Melt oil and margarine in large skillet.
4. Saute the cutlets over medium heat until browned and tender.
5. This should take about 5-8 minutes on each side.
6. Remove cutlets from pan and keep warm.
7. Sauce:.
8. Blend flour with chicken drippings in skillet.
9. Cook for 2 minutes.
10. DO NOT brown further.
11. Add milk, stock and wine.
12. Cook and stir constantly, over med heat, till it thickens.
13. Reduce heat to low, add tarragon and mushrooms.
14. Return cutlets to pan and simmer for 1 minute.
15. Serve immediately.
