Meaty Cheesy Personal Frittatas

Not your traditional frittata. I don't know about you guys, but I've been treated to some pretty boring frittatas. This recipe requires quite a bit of prep time, but the fabulous flavors are worth it. And by using a cupcake pan, you have individual portions. Read more . Don't send your child to school with a sugar loaded poptart. Send them with a hearty personal frittata. Recent studies show that children who have high protein breakfast function better in school. Think of what this great recipe will do for you!
Ingredients:
15 large eggs (remember, it's worth it)
4 roma tomatoes (their sweet flavor does well in this recipe)
1/4 cup fresh basil (yes that's right)
1/4 cup fresh parsley
8 strips of bacon
1 cup of your favorite lunch meat (i like cubed turkey, but you can use anything... including leftover chicken from last night ;-) )
2 cups of shredded mozzarella cheese
3/4 tbs kosher salt
1 tbs black pepper
Directions:
1. Preheat oven to 375 degrees.
2. Fry bacon until it is nice and chewy (note: not crumbly or crunchy! It will ruin the texture of the frittata!)
3. Crack open all the eggs in one large bowl.
4. Whisk until all yokes are broken and batter is a nice consistent yellow color throughout.
5. Chop herbs (better yet pulse in a blender or processor a few times) and throw in with eggs.
6. Dice tomatoes and remove the seeds. Add to bowl.
7. Chop bacon and meat (of your choice) into tiny little pieces and add to bowl.
8. Sprinkle in salt and pepper.
9. Whisk until all the fillings are evenly distributed.
10. Pull out the muffin pan and grease.
11. Ladle even portions into each cup (sometimes I get more then 12 cups can handle, but the more the better!).
12. Bake in the oven for 12 minutes.
13. After 12 minutes, pull the muffin pan out (work quickly) and top each with an even amount of mozzarella (be generous).
14. Bake for the last 8 minutes and pull back out.
15. Let cool for 10 minutes and serve.
