Comfort food with a little zippy sauce. Inspired by Alton Brown. I hate mixing with my hands, so I use a meat mixer by a popular kitchen utensil company to do the work for me - works like a charm and you don't end up with funky-textured meatloaf. It's meatloaf that tastes like... meat!
Ingredients:
2 lbs ground beef
1/2 cup italian seasoned breadcrumbs
1 onion, chopped
1 bell pepper, chopped
3 garlic cloves, minced
1 1/2 teaspoons salt
1 teaspoon pepper
1 cup ketchup
1 teaspoon ground cumin
1/2 teaspoon worcestershire sauce
1/4 teaspoon tabasco sauce
2 tablespoons honey
Directions:
1. Heat oven to 325. In a large bowl, combine the ground beef, bread crumbs, onions, bell pepper, garlic, salt & pepper. Mix with a meat mixer or your hands - but do not squeeze the meat. Form into a log and turn into a 10 meat loaf pan (one that drains). Bake uncovered for 10 minutes. While this is baking, mix up the sauce ingredients. Spread the sauce over the top of the meatloaf and bake for remaining 50 minutes.
