My family loved this. Meatloaf is cooked on top of veggies in a slow cooker. When I get home supper is ready! I have added turnips or rutabagas as well, it's a great way to sneak in vegetables! I got the recipe from a Company's Coming cookbook
Ingredients:
1/4 cup water
5 -6 medium potatoes, peeled and diced
6 medium carrots, peeled and diced
1/4 teaspoon salt
1/4 teaspoon pepper
1 large egg, beaten
1/3 cup ketchup
2 teaspoons beef bouillon powder
1/3 cup onion, chopped
1/4 teaspoon thyme
1/4 cup water
1/3 cup soda cracker crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs lean ground beef
Directions:
1. Put first 5 ingredients into 6 quart(6L) slow cooker.
2. Combine next 9 ingredients in a bowl and mix well.
3. Then add the ground beef, mix well.
4. Place the meat mix on top of the vegetables making sure the meat doesn't touch the side of the pot. (If it does, the meat will stick and burn where it touches).
5. Cover and cook on low 8-10 hours or on high for 4-6 hours.
