This is my mom’s version with a few alterations. When I was a kid my brother and I dreaded meatloaf for dinner but now I love it...
Ingredients:
1 lb ground beef
3/4 cup breadcrumbs
1 slice bread, cut into cubes
1/2 cup onion, chopped (optional)
1/2 teaspoon worcestershire sauce
1/2 teaspoon season salt
1/4 teaspoon pepper
1/4 teaspoon onion powder
1 egg
1/4 cup tomato sauce
1/4 cup tomato sauce
Directions:
1. Mix first ten ingredients until well incorporated (use your hands for best results).
2. Add more tomato sauce a little at a time if meatloaf mixture is too dry.
3. Spray bottom and sides of loaf pan with cooking spray.
4. Place meatloaf into pan and shape into bread loaf shape.
5. Pour remaining 1/4 cup tomato sauce over top of loaf.
6. Bake at 375 for 1 hour or until juices run clear or meat is no longer pink when you cut into it.
