Meatloaf 86 Ketchup

First of all, 86 means without in restaurant lingo. This my home-made meatloaf that I have completely tweaked because I'm not a fan of ketchup on meatloaf. BUT...this is a TOTAL crowd pleaser....it is made with BBQ sauce (I know, sounds weird right?) instead of your typical ketchup. All I can say is, once you try it, you won't believe how much you'll love it! This recipe is SUPER easy to make and can also be doubled or even tripled. .
Ingredients:
1 lb ground beef (feeds up to 4, not much left over)
1 cup prepared stuffing (chicken flavored and smashed, almost bread-crumb like)
2/3 cup barbecue sauce (your favorite brand, of course)
1/2 cup water
1 egg
2/3 cup white onion (chopped, and optional, of course)
Directions:
1. Preheat oven to 400 degrees. Meanwhile, in a large mixing bowl, combine ALL of the ingredients listed above. Carefully mix everything together with your CLEAN HANDS, nicely, as if almost kneading bread. DO NOT use a mixer for this, it will not come out the same. After everything has been mixed, (should form a big, gooey ball that sticks together), shape it into an oval loaf in the center of the drip pan. Make sure the loaf is somewhat firm and nicely shaped into an oval that has a little height to it. Place the pan into the oven for about 45 minutes. After the timer goes off, leave the meatloaf in the oven, but turn the oven off. After about 5 minutes, finally take the meatloaf out of the oven and let rest for at least 10 minutes. ENJOY!
