Ingredients:
2 large eggs whisked
3 slice(s) whole wheat bread diced into small pieces
1 tablespoon(s) worchestershire sauce
1/2 cup(s) 1% milk (can use other - this is what we drink)
1 medium-sized onion chopped fine
1 1/2 pound(s) 90% lean ground beef
1/2 cup(s) sharp cheddar cheese cut into cubes
1/2 cup(s) monterey jack cheese (can use pepper jack for spicy) cut into cubes
1 cup(s) ketchup
1/3 cup(s) light brown sugar
Directions:
1. Whisk eggs then add bread, Worcestershire sauce, milk and onion and mix well. Combine with ground beef (use your clean hands to mix this) Put half of the meat mixture into a glass loaf pan. Put cubed cheeses on top and cover with remaining meat mixture. Pan will be full.
2. Place loaf pan on a large baking sheet to catch drips.
3. Bake at 350 for 50-55 minutes or until done. (if meat has lots of grease, I usually pour that off before adding the ketchup topping - be careful not to spill the loaf!)
4. While mixture bakes, combine ketchup and brown sugar. Then spoon on top of baked meat loaf and continue baking for another 10 minutes or until heated through.
5. (This is great sliced and served as a sandwich the next day if you have any left-overs)
