My grandmother's recipe, very simple yet tasty. My daughter loves when we have this for dinner! I use a meatloaf pan which is fantastic because it keeps the loaf away from the grease in the bottom of the pan.
Ingredients:
1 1/2 lbs ground beef
1 egg, slightly beaten
3/4 cup dry oatmeal
1/2 cup onion, diced
1 (5 1/2 ounce) can tomato juice
1/2 teaspoon black pepper
1/4 teaspoon salt
ketchup
Directions:
1. In large bowl mix all ingredients with wet hands.
2. Form into loaf pan.
3. Bake at 350 degrees for about 45 minutes.
4. Top meatloaf with ketchup (I just squirt right from the bottle).
5. Place back in oven for approximately another 15 - 20 minutes or until meat no longer pink.
