Ingredients:
1 cup brown rice, cooked
1 cup corn, frozen
3 medium carrots, diced
1/2 cup bell pepper, diced
1 onion, diced
4 cloves garlic, minced
1 tablespoon oil
1 (15 ounce) can black eyed peas
1 (14 ounce) can diced tomatoes
2 tablespoons fresh parsley
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
salt and pepper
Directions:
1. saute corn, carrot, pepper, onion, garlic (6 min).
2. stir in rice, tomato, peas and bring to a boil.
3. simmer 15 min.
4. add seasonings.
