These are perfect for vegetarian's in spaghetti or served alone as an autumn appetizer. They are made with squash.
Ingredients:
2 lbs.butternut squash
1 teaspoon salt
3 eggs
1/2 cup breadcrumbs
1/2 cup mint
4 garlic cloves, chopped
1 small onion, chopped
1 tablespoon pepper
2 cups peanut oil
Directions:
1. run squash and salt in food processor Squeeze squash to remove excess water. Add remaining ingredients and mix well. Form into balls and fry until golden brown.
