Meatballs - French Style

A chef friend came round for a Fench evening and I was tasked with starters. As well as leek/onion tarts and a great terrine, these were highlights.... Remember, a meatball is always a meatball, but everyone needs a killer iingredient. Read more . What's mine?
Ingredients:
250g pork mince
1 shallot, very finely diced
2 tsp minced garlic
about 1tbsp finely chopped parsley
1/4 peach, skinned and finely diced
1 egg yolk
2 tsp brandy/cognac (the better quality one, if you have a choice!)
1 tbsp breadcrumb
salt and pepper to taste
Directions:
1. Mix everything together
2. Use your judgement. If too dry add more egg, if too wet more breadcrumb, etc.
3. Roll into balls around 1.5-2cm in diameter (should make around 20-25 with above quantities)
4. BBQ and serve
5. Profit? ;-)
