Meatballs and Sour Cream Gravy

i found this recipe when i was a little girl on a calender now it is a family favorite!
Ingredients:
3 lbs ground chuck
7/8 idaho potato
1 (8 ounce) bag baby carrots
3 celery ribs
1 bell pepper
1/2 cup saltine crackers
2 eggs
1/2 cup margarine
1 (4 ounce) packet onion soup mix
1 -16 ounce sour cream
flour
Directions:
1. mix ground chuck , eggs, dice up green peppers ,crush crackers add to mixture, melt margarine in large skillet .{I use a large iron skillet}, make meatballs ,roll in flour brown in margarine until golden brown, remove meatballs add 2 cups water to drippings add potatoes, carrots , put meatballs on top to finish cooking, cook until potatoes are tender remove meatballs potatoes & carrots into large bowl , add onion soup mix cook until thick remove from heat add sour cream pour gravy over meatballs and vvegetables - enjoy with a hot buttered roll.
