Meatball Soup With Vegetables and Brown Rice

Another great and easy recipe to use up the frozen meatballs - I buy them for DH to eat when I am not home but sometimes they sound good to me too and this is a great way to use them
Ingredients:
1 cup onion, diced
2 tablespoons olive oil
1 cup celery, diced
1 cup carrot, diced
1/2 teaspoon garlic, crushed
2 tablespoons flour
4 cups chicken broth
20 -24 meatballs
2 -3 cups prepared brown rice
salt, to taste
pepper, to taste
Directions:
1. Heat olive oil in large saucepan and sauté onion, garlic, celery and carrots for 5 minutes.
2. Stir in flour to coat vegetables. Add chicken broth, meatballs, salt and pepper.
3. Bring to a boil. Reduce heat and simmer for 10-15 minutes.
4. Add prepared brown rice and serve immediately.
