Maytag Blue Cheese Chips From Killer Creek Chophou...

Killer Creek Chophouse in Alpharetta, GA serves these homemade chips on their appetizer menu! Had them recently on a trip to see my sister in Atlanta, and they are awesome! Adding to my superbowl bash menu.
Ingredients:
1 cup buttermilk
2/3 cup sour cream
2 cups mayonnaise
1 teaspoon minced garlic
1/2 teaspoon tabasco
1 tablespoon worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons lemon juice
3/4 pound maytag blue cheese, crumbled
2 large idaho potatoes
canola oil for deep frying
Directions:
1. In a mixing bowl, combine buttermilk, sour cream, mayonnaise, garlic, Tabasco, Worcestershire, salt, pepper and lemon juice and mix until very smooth.
2. Add 1/2 pound of the cheese and gently mix by hand until just combined.
3. Refrigerate the sauce.
4. Wash and slice the potatoes into chips 1/8 inch thick.
5. Do not peel them.
6. Rinse the chips under cold running water for at least 5 minutes. Drain the chips and pat dry.
7. Heat the oil to 350 degrees.
8. Fry the chips 4-6 minutes, or until golden and crispy.
9. You may need to do this in several batches to prevent overcrowding. Remove and drain on paper towels.
10. Preheat the broiler.
11. Place a 1/4-inch layer of sauce over the entire surface of a large serving plate.
12. Evenly sprinkle the reserved cheese crumbles over the sauce. Place the plate under the broiler until the cheese melts and slightly browns.
13. Remove plate and pile the chips directly onto the warm sauce and serve immediately.
