Makes a great dip for shrimp or use on sandwiches, especially good with sliced tomato and egg sandwiches.
Ingredients:
1 quart mayonnaise
1 cup finely chopped spinach
1/2 cup chopped scallion
1/2 cup chopped cilantro
1 serano chile, seeded and minced
2 tablespoons chopped fresh tarragon
2 tablespoons snipped chives
2 tablespoons lime juice
1 tablespoon lime zest
1/4 teaspoon kosher salt
black pepper, to taste
1 dash hot sauce
Directions:
1. Mix all ingredients in a medium bowl. Taste and adjust seasonings, adding more lime juice, salt, pepper, and hot sauce if desired. Chill for at least 2 hours to allow flavors to mingle.
