A great chicken salad without using mayo. Dream come true!
Ingredients:
6 ounces shredded chicken
1/3 cup dried cranberries
1/4 cup sliced almonds
2 green onions, sliced
2 small celery ribs, chopped
1/2 cup plain greek yogurt
1/2 teaspoon curry powder
2 teaspoons soy sauce
squeeze lemon juice
salt, to taste
Directions:
1. Combine chicken through celery in a bowl.
2. Mix dressing ingredients.
3. Pour over chicken mixture.
4. Toss to coat.
5. Serve!
