Fried Green Tomatoes were a staple growing up. I absolutely adore them. This recipe came down at least 5 generations. I hope you enjoy. The bacon grease is what gives it the authentic flavor, but for vegetarians and those watching their fat intake I would use Peanut Oil.
Ingredients:
green tomatoes
cornmeal, coarse grind if you can find
salt
pepper
buttermilk or egg (optional, might not need
bacon drippings or peanut oil
Directions:
1. Heat oil is large cast iron skillet, enough bacon grease or oil to cover bottom, but not so much that when you put the tomato in that it floats.
2. Slice tomatoes about 1/4 thick. You don't want them too thin or they fall apart during frying.
3. Season both sides with salt and pepper.
4. Dredge in cornmeal and fry to brown on both sides.
5. My Maw Maw would sometimes dip in buttermilk or egg depending on what was in the house first and than dredge and fry because she said sometimes the cornmeal won't adhere right to the tomato and you won't have enough breading.
