Mashed Sweet Potatoes With Molasses

A delicious accompaniment to any main course. The carrots and parsnips are a perfect complement to the sweet potatoes.
Ingredients:
4 medium sweet potatoes (2 lbs. total), peeled and cut into 1-inch chunks
8 small carrots (1 lb. total), peeled and cut into 1-inch chunks
4 med. parsnips (1 lb. total), peeled and cut into 1-inch chunks
salt
4 tbsp unsalted butter, softened
4 tbsp sour cream at room temp
4 tbsp molasses
4 tbsp grated fresh ginger
1/4 cup warmed half-and-half
freshly ground pepper
Directions:
1. In a large saucepan, combine sweet potatoes, carrots, parsnips and cover with cold water.
2. Bring to a boil and simmer until tender, 15-20 mins.
3. Drain well and return to saucepan.
4. Pass the veggies through a potato ricer, or mash by hand.
5. Stir in the butter, sour cream, molasses, grated ginger, and half-and-half.
6. Salt and pepper to taste.
