Mashed Sweet Potatoes With A Pecan Crust

Ingredients:

  • 3 1/2 cups cooked sweet potato , about 2 medium potatoes.(i roast them but they can be boiled or baked)
  • 2 tbsp. flour
  • 1/3 cup brown sugar , firmly packed
  • 2 tbsp. butter
  • 1/3-1/2 cup chopped pecans

Directions:

  1. Preheat oven to 350
  2. Spray 9 in. pie plate with cooking spray
  3. Beat potatoes, egg whites, and flour with hand mixer until smooth.
  4. Put into pie plate
  5. Bake for 15 minutes
  6. Put brown sugar and butter in small microwaveable bowl
  7. Heat on high power for about 20 seconds, or until melted
  8. Remove potatoes from oven
  9. Sprinkle pecans over potatoes
  10. Drizzle sugar mixture over pecans
  11. Return to oven and bake 15 minutes more
