Mashed Potatoes With Fennel

Ingredients:
3 1/2 cups peeled cubed baking potato (about 1 3/4 pounds)
2 tablespoons reduced-calorie margarine
3/4 cup chopped fennel bulb
1/2 cup chopped onion
1/2 teaspoon salt
1/8 teaspoon pepper
Directions:
1. Place potato in a medium saucepan and cover with water; bring to a boil. Reduce heat, and simmer 15 minutes or until tender; drain, reserving 1/4 cup liquid.
2. Melt margarine in a medium nonstick skillet over medium heat. Add fennel and onion; cook, stirring constantly, 12 minutes or until tender.
3. Combine potato, reserved potato liquid, fennel mixture, salt, and pepper in a medium bowl. Mash with a potato masher.
