Mashed Potatoes With Cabbage And Cheese

We have the marvelous, flavorful, earthy, versatile and lowly potato... I could live on this vegetable! Sauteing some kielbasa or sausage chunks could make this a one pot meal, for sure.
Ingredients:
8 cups cabbage, chopped (i boil leaves and then chop to make 8 cups)
2 1/2 pounds potatoes, diced for mashing
1/2 cup butter, cut in pieces
1/2 cup chives, minced
4 ounces cheddar cheese, shredded
1/2 pound kielbasa or sausage, cooked in chunks (optional)
Directions:
1. Butter an 8-cup baking dish.
2. Cook cabbage in a large pot of boiling water for 2 minutes.
3. Remove cabbage from pot with slotted spoon, reserving the water.
4. Preheat oven to 350 degrees F.
5. Place potatoes into cabbage water.
6. Cook until tender.
7. Drain potatoes.
8. Add butter and mash the potatoes.
9. Mix in the chives and the cabbage.
10. Stir in the kielbasa/sausage, if using.
11. Add salt and pepper, to taste.
12. Pour into buttered dish.
13. Bake for 35 minutes or until heated through and cheese is bubbly.
