Ingredients:
3 pounds peeled baking potatoes, cut into somewhat uniform pieces
1/2 cup 1% milk
1/2 cup fat-free chicken broth
3 tbsp lite sour cream
1 salt and pepper to taste
1/4 cup butter
Directions:

7. Cover potatoes with water in a saucepan. Bring to boil and then simmer until potatoes are tender. Drain and return potatoes to the saucepan. Add milk and broth. Mash. Cook briefly until heated through (a minute or two), stirring constantly. Then stir in sour cream and season with salt and pepper to taste. Top with butter if desired.
