This is a delicious recipe to use leftover mashed potatoes. The number of servings depends on the amount of potatoes you start with, more potatoes, more servings. I try to make extra mashed potatoes just so I can make these. Read more . My family loves these!
Ingredients:
2 to 2 1/2 cups cold mash potatoes (estimates are okay)
1 egg
salt and pepper to taste
2 to 4 tablespoons shortening, depending on size of skillet
Directions:
1. Put mashed potatoes in a bowl big enough to mix in the egg
2. Mix in one egg until the potatoes are soft, the mixture should not be too loose or it will not hold together while frying
3. One egg should be enough for up 2 to 2 1/2 cups of potatoes, it's better to be a little dry
4. Melt enough shortening in a skillet to measure 1/4 inch deep
5. Spoon potato mixture in to hot skillet to make individual cakes about 4 inches across, in a 10 inch cast iron skillet I can fit 4 at a time
6. Salt and pepper each cake
7. Fry on first side until brown
8. Carefully flip so the cakes don't break apart, brown on second side
9. Depending on the size of your skillet you will probably need to fry in batches
10. Drain on paper towels, serve warm
