Mashed Potato Patties

This potato patttie is served with a sour cream and olive topping
Ingredients:
2 1/2 cups prepared mashed potatoes
2 oz shredded gouda or feta cheese
1 tbs flour
1 tbs chopped cilantro or dill or tarragon or green onion
1/8 tsp black pepper
1 egg
1 tbs water
1/2 cup fine dreied bread crumbs
2 tbs olive oil
topping
1/2 cup sour cream
3 tbs tapenade or olive spread
1 tsp of peprared horseradish or 1 tsp ground cumin
Directions:
1. In a bowl, stir potatoes, flour cheese, cilantro and pepper.
2. Form into 8 patties
3. In another bowl beat together egg and water
4. In another bowl place in the bread crunbs
5. Dip patties into egg mixture then breadcrumbs
6. Heat oilive oil in pan and over medium heat in a non stick pan and cook patties about 4 minutes on each side or until golden.
7. Remove to 300F oven to keep warm if need.
8. Combine sauce ingerdients and serve over potato patties
