This is my Mother's recipe. We always have this whenever we make a holiday ham dinner. It was a big favorite of my late husbands, he would lick the bowl I mixed them in even before baking them. I always have to double this because I have often run out of them with everyone taking seconds and thirds. This can easily be made a day ahead and baked on the day you serve it.
Ingredients:
12 medium potatoes, peeled
1/2 cup butter, melted
1 (8 ounce) package cream cheese
1 cup sour cream
2 teaspoons salt
1/4 teaspoon ground pepper
1 tablespoon dried chives
1/4 teaspoon paprika

Directions:
1. Boil potatoes until tender.
2. Drain and mash potatoes, In a large mixing bowl add to potatoes the butter, cream cheese, sour cream, salt and pepper. Mix well, beating with electric mixer until smooth.
3. Stir in chives.
4. Transfer to well greased casserole dish. Sprinkle with paprika and dot with additional butter if desired.
5. Bake at 350 degrees for 35 minutes.
