Ingredients:

Directions:

  1. Peel and boil potatoes.
  2. Saute onion in the butter slowly, until onions are soft and yellow.
  3. Add drained mushrooms to onions and cook two more minutes.
  4. Remove mushroom and onions from skillet with slotted spoon.
  5. Mash potatoes with milk, reserved mushroom liquid, and salt and pepper to taste.
  6. Beat butter remaining in skillet into the potatoes.
  7. In 9x13 casserole, spread thin layer (1/3) of the potatoes.
  8. Next, spread 1/2 of the mushroom mixture.
  9. Then, 1/2 of the sour cream.
  10. Repeat layers, ending with remaining 1/3 of potatoes.
  11. Brush the top with a little melted butter, and sprinkle with paprika.
  12. Bake at 350 for 20-30 minutes.
