Mashed Potato Casserole

Nice and creamy. I use low-fat products, but use the regular if you like. If I'm using red potatoes, I don't bother to peel them.
Ingredients:
4 lbs potatoes, cut into chunks, peel if desired
2 tablespoons butter
8 ounces reduced-fat cream cheese, softened
1 1/2 cups reduced-fat sour cream
1/2 cup skim milk
1 tablespoon dijon mustard
1/2-1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
4 scallions, chopped
2 eggs, beaten
1/4 teaspoon paprika
Directions:
1. Preheat oven to 350. Grease a 2-qt. casserole; set aside.
2. Boil the potatoes until tender and mashable.
3. Drain potatoes and return to pot.
4. Mash potatoes with the butter, cream cheese, sour cream, milk, mustard, salt, pepper and garlic powder. Mash to desired smoothness.
5. Stir in the chopped scallions and beaten eggs. Mix well.
6. Pour into the casserole.
7. Sprinkle with paprika.
8. Bake at 350 for 30-35 minutes.
