If you are looking for a non-cheesecakey mascarpone substitute, this is defiantly the way to go
Ingredients:
3 egg yolks
1/2 cup sugar
1/3 cup milk
1 (15 ounce) container ricotta cheese
1 cup heavy cream
Directions:
1. Whisk egg yolks, sugar, and milk-simmer 2-3 minutes. Cool, and fold in ricotta cheese. In a separate bowl whip the heavy cream until it peaks. Add whipped heavy cream and milk mixture in a food processor until it forms a homogeneous cream.
