Mascarpone Coated Berries In Puff Pastry

A very simple, yet pretty recipe. Great for brunch buffets or a light lunch dessert. You do want to use fresh berries, for this, but any type will do!
Ingredients:
1 package puff pastry shells, baked and cooled
8oz mascarpone cheese, room temp
juice from 1/2-1 lemon
1-2t honey
3 cups fresh berries(strawberries, blueberries, black or red raspberries, etc)
Directions:
1. Whip cheese with honey and slowly add lemon juice to thin out, slightly.
2. Carefully fold in berries
3. Serve in prepared pastry cups.
4. Garnish with fresh mint, if desired
