Here’s a true Southern classic for you from a bona fide Southern matriarch and hails to you from the archives of my former mother-in-law, who is now in her 90’s.This is one of those recipes passed down by word of mouth, mother to daughter; it took me almost twenty years to get her to write it down for me and really teach me to perfect it! Read more ! It was my late husband’s very favorite in the world, atop decadent homemade chocolate cake, of course. As w/ many of the old recipes, the ingredients and the instructions are simple; just take care not to deviate. I cherish this one. Enjoy!
Ingredients:
1 cup granulated sugar
1/2 cup light karo syrup
4 tablespoons of water
4 egg whites; beat these very stiff on high speed.
1 teaspoon vanilla extract
Directions:
1. SIMPLE.
2. Combine sugar, syrup, and water and cook on medium heat, stirring frequently, until the mixture ‘threads like hair’ ~ her words.
3. Add mixture to egg whites, add vanilla, and beat on medium-high speed until glossy and stiff but spreadable.
4. Ice cake immediately.
5. This really will melt in your mouth ~ it’s glossy and makes a gorgeously yummy icing ~ pretty much to die for!
6. The glossiness of the icing makes an awesome presentation, too!
7. She always baked my husband a chocolate cake with this icing when she knew we were coming to visit ~ we lived almost four hours from her. I’ve never tried another cake flavor combo; this was just IT. Let me know if you try another one. This is a great cake for the holidays, too. Yumm!
