If you love coconut custard, you’ve got to try this one! It’s an old family recipe passed down to me by one of last of the true 'old timers'. The taste is to die for! The great thing is that it’s so easy to make, AND it forms its own crispy, buttery shell! Read more ! It’s a hit at family gatherings and is one of the first desserts to disappear. Who ate the coconut pie? I didn’t get any! Ever heard that? You will!
Ingredients:
4 eggs, beaten
1 3/4 cup sugar
1/2 cup self-rising flour (don’t substitute any other flour for this one!)
2 cups milk
1 teaspoon vanilla extract
1/2 stick butter, melted (don’t substitute margarine!)
1 7-ounce package coconut (or, freshly grated, if you like)
Directions:
1. Preheat oven to 350.
2. Beat the eggs. Add sugar and mix well.
3. Gradually add flour.
4. Slowly pour in milk while mixer is on slowest speed.
5. Add vanilla, blend in melted butter, then stir the coconut into the mixture.
6. Pour into Ungreased 9” pie pan.
7. Bake for approximately 30 minutes or until very light golden brown on top.
8. Allow to set before cutting, approximately 15 minutes.
9. This is an impossible pie to save ~ get your piece first before it disappears! Enjoy!
