This is a great tasting pie with a coconut crust. Ingredients:
3 tablespoons butter |
1 1/2 cups coconut |
1/4 ounce plain gelatin |
1/4 cup water |
1/2 cup water, boiling |
2/3 cup sugar |
6 ounces frozen pink lemonade concentrate |
1 cup cool whip |
Directions:
1. Place the butter in saucepan - melt it. Add the coconut and brown. Pat into a 9 inch pie pan. 2. Stir the gelatin with the cold water until dissolved. Then add the boiling water and sugar with the pink lemonade concentrate. Stirring until dissolved. Refrigerate until thick but not set up. Fold in the cool whip. Pour into the crust. 3. Refrigerate until served. |
