Ingredients:
2 cups chopped cooked chicken
1 1/2 cups chopped celery
3/4 cup mayonnaise
1 teaspoon salt
1/4 teaspoon red pepper
lettuce leaves
2 hard-cooked eggs, sliced (optional)
1 teaspoon capers (optional)
Directions:
1. Combine chicken with next 4 ingredients in a medium mixing bowl; mix well. Chill at least 2 hours.
2. Serve chicken salad in a lettuce- lined bowl; garnish with egg slices and capers, if desired.
